Instructions
- 1. Preheat the oven to 475°F.
- 2. Wash the Brussels sprouts, trim the ends, and slice them in half.
- 3. Arrange the chicken breasts on a baking sheet with the meat side facing up and nestle the Brussels sprouts around the chicken.
- 4. Dice the bacon into ½-inch pieces and sprinkle it on top of the Brussels sprouts.
- 5. In a small jar, combine the olive oil, lemon juice, salt, pepper, and rosemary, then shake until emulsified.
- 6. Drizzle the oil mixture over the chicken and bake for 30 minutes or until the chicken reaches an internal temperature of 165°F.
