Ingredients

The main ingredients

  • 1 pound Brussels sprouts
  • 4 pieces chicken breasts (split, bone-in)
  • 2 pieces bacon

The dressing

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice (freshly squeezed)

  • to taste none pepper
  • 1 spring rosemary (stem removed and leaves chopped)

Instructions

  1. 1. Preheat the oven to 475°F.
  2. 2. Wash the Brussels sprouts, trim the ends, and slice them in half.
  3. 3. Arrange the chicken breasts on a baking sheet with the meat side facing up and nestle the Brussels sprouts around the chicken.
  4. 4. Dice the bacon into ½-inch pieces and sprinkle it on top of the Brussels sprouts.
  5. 5. In a small jar, combine the olive oil, lemon juice, salt, pepper, and rosemary, then shake until emulsified.
  6. 6. Drizzle the oil mixture over the chicken and bake for 30 minutes or until the chicken reaches an internal temperature of 165°F.
