One Pan Baked Chicken and Broccoli

Ingredients

  • 1 tbsp avocado oil
  • 2 tbsp butter or ghee, melted
  • 2 tbsp coconut aminos
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 medium butternut squash, seeds removed and cut into small cubes
  • 4 pieces boneless skinless chicken thighs (or breasts)
  • 4 cups broccoli, ends removed and cut into florets
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F and line a sheet pan with parchment paper.
  2. Chop the butternut squash into small cubes and spread them out on the baking pan. Drizzle with avocado oil and season with salt and pepper.
  3. In a small bowl, whisk together the melted ghee, coconut aminos, chili powder, and smoked paprika.
  4. Move the squash to make room for the chicken and place the chicken in a single layer on the baking sheet. Brush both sides of the chicken with the sauce mixture.
  5. Roast the chicken and squash in the oven until the chicken is cooked through, about 30-40 minutes.
  6. While the chicken is cooking, prepare the broccoli by cutting it into small florets and seasoning with oil, salt, and pepper.
  7. When the chicken has about 15 minutes left, add the broccoli on top of the chicken and squash and return to the oven.
  8. Remove from the oven and serve immediately.
