One Pan Baked Chicken and Broccoli

butternut squash, seeds removed and cut into small cubes

boneless skinless chicken thighs (or breasts)

broccoli, ends removed and cut into florets

Instructions
- Preheat the oven to 400°F and line a sheet pan with parchment paper.
- Chop the butternut squash into small cubes and spread them out on the baking pan. Drizzle with avocado oil and season with salt and pepper.
- In a small bowl, whisk together the melted ghee, coconut aminos, chili powder, and smoked paprika.
- Move the squash to make room for the chicken and place the chicken in a single layer on the baking sheet. Brush both sides of the chicken with the sauce mixture.
- Roast the chicken and squash in the oven until the chicken is cooked through, about 30-40 minutes.
- While the chicken is cooking, prepare the broccoli by cutting it into small florets and seasoning with oil, salt, and pepper.
- When the chicken has about 15 minutes left, add the broccoli on top of the chicken and squash and return to the oven.
- Remove from the oven and serve immediately.
