Ingredients

  • 1 tbsp olive oil
  • 2 tbsp butter or ghee, melted
  • 2 tbsp honey
  • 1 tbsp yellow mustard
  • 3 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp chives
  • 1 large sweet potato, cut into small cubes
  • 2 boneless skinless chicken breasts
  • 4 cups broccoli, cut into florets
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F and prepare a baking pan.
  2. Chop the sweet potato into small cubes, place on the baking pan, drizzle with olive oil, and season with salt and pepper.
  3. In a bowl, whisk together melted butter, honey, mustard, garlic, oregano, and chives, then season with salt and pepper.
  4. Make space on the baking pan for the chicken, place the chicken in a single layer, and brush with the honey mixture on both sides.
  5. Roast the chicken and sweet potatoes in the oven until the chicken is cooked through, about 25-30 minutes.
  6. Prepare the broccoli by cutting it into florets, drizzling with olive oil, and seasoning.
  7. When the chicken has 10 minutes left, add the broccoli to the pan and return it to the oven.
  8. Serve immediately.
