Instructions
- Preheat the oven to 400°F and prepare a baking pan.
- Chop the sweet potato into small cubes, place on the baking pan, drizzle with olive oil, and season with salt and pepper.
- In a bowl, whisk together melted butter, honey, mustard, garlic, oregano, and chives, then season with salt and pepper.
- Make space on the baking pan for the chicken, place the chicken in a single layer, and brush with the honey mixture on both sides.
- Roast the chicken and sweet potatoes in the oven until the chicken is cooked through, about 25-30 minutes.
- Prepare the broccoli by cutting it into florets, drizzling with olive oil, and seasoning.
- When the chicken has 10 minutes left, add the broccoli to the pan and return it to the oven.
- Serve immediately.
