Honey Mustard Chicken & Sweet Potato

Instructions
- Preheat the oven to 350°F.
- In a baking dish, combine chicken, onion, garlic, ginger, ½ teaspoon Herbamare, and dried apricots.
- Pour Honey Mustard Dressing and orange juice over the mixture and toss to combine.
- Cover and marinate in the fridge for 24 hours.
- In a mixing bowl, toss red bell pepper, sweet potatoes, and remaining 1 teaspoon Herbamare.
- Add the sweet potato mixture to the marinated chicken and toss to combine.
- Bake for 45 minutes.
- Optional: Drizzle with avocado oil and garnish with fresh thyme before serving.
