Ingredients

The main ingredients

  • 2 pounds boneless skinless chicken breast
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 ½ teaspoons Herbamare
  • 1 cup unsulfered dried apricots
  • ½ cup Honey Mustard Dressing
  • ½ cup orange juice
  • 1 medium red bell pepper
  • 1 ½ pounds sweet potato

Optional garnish

  • to taste fresh thyme

Instructions

  1. Preheat the oven to 350°F.
  2. In a baking dish, combine chicken, onion, garlic, ginger, ½ teaspoon Herbamare, and dried apricots.
  3. Pour Honey Mustard Dressing and orange juice over the mixture and toss to combine.
  4. Cover and marinate in the fridge for 24 hours.
  5. In a mixing bowl, toss red bell pepper, sweet potatoes, and remaining 1 teaspoon Herbamare.
  6. Add the sweet potato mixture to the marinated chicken and toss to combine.
  7. Bake for 45 minutes.
  8. Optional: Drizzle with avocado oil and garnish with fresh thyme before serving.
