Instructions
- Preheat the oven to 375°F.
- In a bowl, whisk together the mustards, honey, and 1 Tbsp of olive oil.
- Spray a 13 by 9-inch baking dish with non-stick cooking spray.
- In a skillet, heat the remaining olive oil over medium heat, add the onion and sauté until golden brown, then add garlic and sauté for an additional 30 seconds.
- Spread the onion and garlic mixture evenly in the baking dish.
- Season the chicken breasts with salt and pepper and place them over the onion layer.
- Pour the mustard mixture over the chicken, ensuring each piece is coated.
- Place rosemary sprigs between the chicken breasts.
- Bake for 25 to 30 minutes until the chicken reaches an internal temperature of 165°F, covering with foil if necessary to prevent burning.
