Ingredients

The chicken

  • 4 to 5 pieces boneless skinless chicken breasts (8 oz each) or 6 boneless skinless chicken thighs

The sauce

  • ¼ cup whole grain coarse mustard
  • 2 Tbsp Dijon mustard
  • 2 Tbsp yellow mustard
  • ¼ + 2 Tbsp honey
  • 2 Tbsp olive oil (divided)
  • to taste salt and freshly ground black pepper

The aromatics

  • 1 cup chopped yellow onion
  • 1 Tbsp minced garlic (about 3 cloves)
  • 4 small sprigs rosemary

Instructions

  1. Preheat the oven to 375°F.
  2. In a bowl, whisk together the mustards, honey, and 1 Tbsp of olive oil.
  3. Spray a 13 by 9-inch baking dish with non-stick cooking spray.
  4. In a skillet, heat the remaining olive oil over medium heat, add the onion and sauté until golden brown, then add garlic and sauté for an additional 30 seconds.
  5. Spread the onion and garlic mixture evenly in the baking dish.
  6. Season the chicken breasts with salt and pepper and place them over the onion layer.
  7. Pour the mustard mixture over the chicken, ensuring each piece is coated.
  8. Place rosemary sprigs between the chicken breasts.
  9. Bake for 25 to 30 minutes until the chicken reaches an internal temperature of 165°F, covering with foil if necessary to prevent burning.
