Ingredients

The chicken

  • 2 pieces chicken breasts (12 oz each)
  • 1/4 cup all-purpose flour
  • 1 1/2 Tbsp olive oil
  • Salt to taste
  • Freshly ground black pepper to taste

The sauce

  • 1 Tbsp minced garlic
  • 3/4 cup low-sodium chicken broth
  • 1 1/2 tsp minced fresh thyme
  • 1 1/2 Tbsp dijon mustard
  • 1 1/2 Tbsp yellow mustard
  • 3 Tbsp honey
  • 1/8 tsp cayenne pepper
  • 1 1/2 tsp cornstarch
  • 1/2 cup heavy cream
  • 1 Tbsp minced fresh parsley (optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken with salt and pepper, then dredge in flour.
  3. Cook chicken in the skillet until golden brown, about 5 minutes on each side.
  4. In a bowl, mix dijon mustard, yellow mustard, honey, and cayenne pepper for the sauce.
  5. In another bowl, whisk together chicken broth and cornstarch to make a slurry.
  6. Remove chicken and sauté garlic in the skillet briefly.
  7. Add chicken broth and thyme to the skillet, simmer until reduced by half.
  8. Stir in the honey mustard mixture and cornstarch slurry, cooking until thickened.
  9. Add heavy cream and heat through, adjusting consistency with more broth if needed.
  10. Serve chicken with sauce poured over and garnish with parsley.
