Instructions
- Preheat the oven to 350°F.
- Trim excess fat from the chicken thighs, rinse with cold water, and pat dry.
- In a large bowl, combine whole grain mustard, Dijon mustard, honey, soy sauce, tarragon, and ginger.
- Add the chicken thighs to the bowl and toss to coat them in the sauce.
- Place the coated thighs in a roasting dish and add more tarragon leaves if desired.
- Bake for 45 minutes or until the chicken reaches an internal temperature of 175°F and the juices run clear.
- Spoon some of the cooked sauce from the roasting dish over the thighs before serving.
