Ingredients

The chicken

  • 8 pieces boneless skinless chicken thighs

The sauce

  • ¼ cup whole grain mustard
  • ¼ cup Dijon mustard
  • ½ cup honey
  • 1 teaspoon soy sauce
  • 2 tablespoons tarragon leaves, chopped
  • 1 tablespoon fresh ginger, minced

Instructions

  1. Preheat the oven to 350°F.
  2. Trim excess fat from the chicken thighs, rinse with cold water, and pat dry.
  3. In a large bowl, combine whole grain mustard, Dijon mustard, honey, soy sauce, tarragon, and ginger.
  4. Add the chicken thighs to the bowl and toss to coat them in the sauce.
  5. Place the coated thighs in a roasting dish and add more tarragon leaves if desired.
  6. Bake for 45 minutes or until the chicken reaches an internal temperature of 175°F and the juices run clear.
  7. Spoon some of the cooked sauce from the roasting dish over the thighs before serving.
