One-Dish Chicken Sweet Potato Bake with Broccoli

Instructions
- Preheat the oven to 375°F and prepare a baking dish with nonstick cooking spray.
- In the baking dish, combine the chicken, broccoli, sweet potatoes, red onion, garlic, dates, oil, Italian seasoning, salt, and pepper, and toss to coat evenly.
- Cover the dish with foil and bake for 20 minutes. Then, remove the foil, stir, and bake for an additional 15-20 minutes until the sweet potatoes are tender and chicken is cooked through.
- Toast the nuts in a skillet over medium heat until fragrant, about 4-7 minutes, then remove from heat.
- Sprinkle the toasted nuts over the bake just before serving and top with cheese and a squeeze of lemon or lime if desired.
