Honey Garlic Chicken

Ingredients

The chicken

  • lbs boneless skinless chicken breasts, diced into 1-inch cubes
  • 2 large eggs
  • cups panko bread crumbs

The sauce

  • cup water, divided
  • tsp cornstarch
  • Tbsp olive oil
  • Tbsp minced garlic
  • 1 tsp finely peeled and minced ginger
  • cup honey
  • Tbsp soy sauce

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Whisk the eggs in a bowl until well blended.
  3. Pour panko bread crumbs into a shallow dish.
  4. Dip chicken pieces in egg, then transfer to panko and coat each piece.
  5. Place the coated chicken on the baking sheet in a single layer.
  6. Bake the chicken until cooked through, about 14 to 18 minutes.
  7. While the chicken is baking, prepare the honey garlic sauce by mixing cornstarch with 1 Tbsp of water until smooth, then add remaining water.
  8. Heat olive oil in a saucepan, sauté garlic and ginger until lightly golden.
  9. Add honey and soy sauce to the pan, then whisk in the cornstarch mixture.
  10. Bring the sauce to a boil and cook until thickened, about 30 seconds to 1 minute.
  11. Toss the cooked chicken with the sauce just before serving.
