Honey Garlic Chicken

The chicken

boneless skinless chicken breasts, diced into 1-inch cubes

The sauce

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Whisk the eggs in a bowl until well blended.
- Pour panko bread crumbs into a shallow dish.
- Dip chicken pieces in egg, then transfer to panko and coat each piece.
- Place the coated chicken on the baking sheet in a single layer.
- Bake the chicken until cooked through, about 14 to 18 minutes.
- While the chicken is baking, prepare the honey garlic sauce by mixing cornstarch with 1 Tbsp of water until smooth, then add remaining water.
- Heat olive oil in a saucepan, sauté garlic and ginger until lightly golden.
- Add honey and soy sauce to the pan, then whisk in the cornstarch mixture.
- Bring the sauce to a boil and cook until thickened, about 30 seconds to 1 minute.
- Toss the cooked chicken with the sauce just before serving.
