Ingredients

The chicken

  • 2 pounds boneless skinless chicken breasts, cubed
  • Salt and pepper to taste

The sauce

  • ¾ cup low-sodium chicken broth
  • 6 cloves garlic, finely minced or pressed
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon cornstarch
  • Pinch red pepper flakes

Cooking

  • 1 tablespoon olive oil

For serving

  • Hot cooked rice or quinoa and edamame (optional)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Whisk together the broth, garlic, honey, soy sauce, cornstarch, and red pepper flakes, then set aside.
  3. Heat olive oil in a large nonstick skillet over medium heat until hot.
  4. Add the chicken in a single layer and cook until golden on one side, then flip the chicken pieces.
  5. Stir the sauce into the skillet and bring to a simmer.
  6. Cook until the sauce thickens slightly and the chicken is cooked through.
  7. Serve over hot cooked rice or quinoa and edamame if desired.
