Ingredients

The chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 ½ Tbsp olive oil
  • 1 ½ Tbsp butter
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

The sauce

  • cup low-sodium chicken broth
  • 1 ½ tsp cornstarch
  • 2 tsp lime zest
  • cup fresh lime juice
  • ¼ cup honey
  • 1 Tbsp soy sauce

For serving

  • sliced green onions
  • cooked coconut rice (optional)

Instructions

  1. Whisk together a small amount of chicken broth with cornstarch in a bowl, then add the remaining broth, lime zest, lime juice, honey, and soy sauce.
  2. Pound the chicken breasts to an even thickness and season with salt and pepper.
  3. Heat olive oil in a skillet and cook the chicken for about 5-6 minutes on each side until golden brown and cooked through.
  4. Transfer the chicken to a plate and cover with foil to keep warm.
  5. In the same skillet, melt butter and sauté garlic until fragrant.
  6. Add the honey lime sauce to the skillet and cook until thickened.
  7. Return the chicken to the skillet, spoon sauce over it, and garnish with green onions before serving.
