Ingredients

The Chicken

  • 4 pieces skinless boneless chicken breasts
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

The Sauce

  • 1 cup chicken broth
  • 1 tablespoon fresh lime juice
  • ¼ cup finely chopped onion
  • 1 tablespoon chopped cilantro
  • ½ teaspoon red pepper flakes
  • 3 tablespoons heavy cream
  • 2 tablespoons unsalted butter

Optional Garnishes

  • to taste lime wedges
  • to taste more cilantro
  • to serve steamed asparagus

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness and season with salt and pepper.
  3. Heat olive oil in a large ovenproof skillet over medium-high heat and cook the chicken for 6-7 minutes, turning once.
  4. Remove the chicken and prepare the sauce in the same skillet by adding broth, lime juice, onion, cilantro, and red pepper flakes.
  5. Bring the sauce to a boil and let it reduce for about 10 minutes.
  6. Add cream and butter to the sauce, stirring until the butter melts.
  7. Return the chicken to the skillet and bake in the oven for 5-10 minutes until fully cooked.
  8. Serve the chicken with the sauce and optional garnishes.
