Cilantro Lime Chicken

The chicken

bone-in, skin-on chicken thighs

Instructions
- Combine olive oil, lime zest, lime juice, cilantro, garlic, cumin, and red pepper flakes in a bag or dish.
- Add chicken and toss to coat. Marinate for 30 minutes at room temperature or up to 2 hours in the fridge.
- Preheat the oven to 425°F.
- Transfer chicken to a baking sheet, reserving marinade, and season with salt and pepper.
- In a skillet, heat remaining olive oil and add chicken skin-side down with reserved marinade.
- Cook until the skin is golden brown, about 6 minutes, then flip and cook for 2 more minutes.
- Transfer the skillet to the oven and bake until chicken reaches 165°F, about 12-15 minutes.
- Remove from oven and let cool for 5 minutes before serving.
