Cilantro Lime Chicken

Ingredients

The marinade

  • 4 tablespoons olive oil
  • 2 teaspoons lime zest
  • ¼ cup fresh lime juice
  • ¼ cup cilantro
  • 2 cloves garlic
  • ½ teaspoon ground cumin
  • a pinch red chili flakes

The chicken

  • 4 pieces bone-in, skin-on chicken thighs
  • to taste salt
  • to taste black pepper

Instructions

  1. Combine olive oil, lime zest, lime juice, cilantro, garlic, cumin, and red pepper flakes in a bag or dish.
  2. Add chicken and toss to coat. Marinate for 30 minutes at room temperature or up to 2 hours in the fridge.
  3. Preheat the oven to 425°F.
  4. Transfer chicken to a baking sheet, reserving marinade, and season with salt and pepper.
  5. In a skillet, heat remaining olive oil and add chicken skin-side down with reserved marinade.
  6. Cook until the skin is golden brown, about 6 minutes, then flip and cook for 2 more minutes.
  7. Transfer the skillet to the oven and bake until chicken reaches 165°F, about 12-15 minutes.
  8. Remove from oven and let cool for 5 minutes before serving.
