Cilantro Lime Chicken

Ingredients

The chicken

  • 4 medium Bone-in chicken thighs

The marinade

  • ¼ cup Avocado oil
  • ¼ cup Fresh cilantro (chopped)
  • 2 tbsp Lime juice
  • 2 cloves Garlic (minced)
  • 1 tsp Sea salt
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • ½ tsp Cayenne pepper

Instructions

  1. Mix the marinade ingredients in a small bowl.
  2. Marinate the chicken thighs in the mixture for at least 30 minutes in the refrigerator.
  3. Preheat the oven to 400°F (204°C).
  4. Sear the chicken skin side down in a hot cast iron skillet for 2-3 minutes until browned, then flip and sear the other side.
  5. Transfer the skillet to the oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 170°F (76°C).
  6. Let the chicken rest for a few minutes before serving.
