Instructions
- Whisk together lime zest, lime juice, olive oil, cilantro, garlic, honey, cumin, salt, and pepper in a mixing bowl to make the marinade.
- Place chicken in a resealable bag, pour marinade over it, seal the bag, and rub the marinade over the chicken.
- Let the chicken marinate in the refrigerator for 1 hour.
- For grilling, preheat the grill to medium-high heat.
- Remove chicken from marinade and grill until the center reaches 165°F, about 5-6 minutes per side.
- For stovetop cooking, heat olive oil in a skillet over medium-high heat, wipe excess marinade off the chicken, and cook until the center reaches 165°F, about 5-7 minutes per side.
- Serve the chicken warm, garnished with chopped cilantro.
