Cilantro-Lime Chicken

Ingredients

The chicken

  • 2 lbs boneless skinless chicken thighs

The marinade

  • 1 Tbsp lime zest
  • cup fresh lime juice
  • ¼ cup olive oil
  • cup chopped fresh cilantro
  • 1 ½ Tbsp minced garlic
  • 1 tsp honey
  • 1 tsp ground cumin
  • to taste salt
  • to taste black pepper

For garnish

  • 1 Tbsp chopped cilantro

Instructions

  1. Whisk together lime zest, lime juice, olive oil, cilantro, garlic, honey, cumin, salt, and pepper in a mixing bowl to make the marinade.
  2. Place chicken in a resealable bag, pour marinade over it, seal the bag, and rub the marinade over the chicken.
  3. Let the chicken marinate in the refrigerator for 1 hour.
  4. For grilling, preheat the grill to medium-high heat.
  5. Remove chicken from marinade and grill until the center reaches 165°F, about 5-6 minutes per side.
  6. For stovetop cooking, heat olive oil in a skillet over medium-high heat, wipe excess marinade off the chicken, and cook until the center reaches 165°F, about 5-7 minutes per side.
  7. Serve the chicken warm, garnished with chopped cilantro.
