Ingredients

The chicken

  • 2 – 2 ½ lbs. skin on chicken thighs

The marinade

  • ½ cup fresh lime juice
  • 3 teaspoons fresh lime zest
  • ¼ cup olive oil
  • 4 tablespoons fresh cilantro, chopped finely
  • 2 jalapeños, chopped finely
  • 4 cloves garlic, chopped finely
  • 1 tablespoon honey
  • 2 teaspoons salt
  • 1 teaspoon chili powder

Instructions

  1. Rinse and dry the chicken thighs, removing the bones while keeping the skin on.
  2. In a large bowl, whisk together all marinade ingredients until well combined.
  3. Add the chicken to the marinade, ensuring it is evenly coated, and marinate for 2 hours.
  4. Preheat the grill and brush it with oil.
  5. Place the marinated chicken on the grill, adding some of the marinade ingredients on top.
  6. Grill the chicken until golden brown and charred on both sides, then serve immediately.
