Ingredients

The chicken

  • 16 pieces boneless skinless chicken thighs

The marinade

  • 3 big limes (juice and zest)
  • ¼ cup extra-virgin olive oil
  • 2 pieces jalapeño peppers (chopped finely)
  • 4 cloves garlic (minced)
  • 2 tbsp unpasteurized honey
  • 1 tbsp chili powder
  • 1 tbsp salt
  • 1 tsp onion powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin

Instructions

  1. Combine all marinade ingredients in a large bowl and mix well.
  2. Place chicken thighs in a non-reactive container and pour in the marinade, ensuring they are fully coated.
  3. Cover and refrigerate to marinate for at least 4 hours, preferably overnight.
  4. Preheat the grill to high heat and brush with oil if necessary.
  5. Place chicken on the grill, nice side down, lower heat to medium, and close the lid.
  6. Cook for about 5 minutes until the meat detaches easily, then flip the chicken.
  7. Spoon leftover marinade over each thigh, close the lid, and cook for another 3 to 5 minutes until charred and cooked through.
  8. Remove chicken and let it rest for 5 minutes before serving.
