Chili Lime Grilled Chicken

Ingredients

The chicken

  • 2 lb boneless, skinless chicken breasts

The marinade

  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 ½ tsp ancho chili powder
  • ½ tsp chipotle chili powder
  • 1 ½ tsp cumin
  • 1 ½ tsp coriander
  • 1 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • 2 Tbsp chopped cilantro

Instructions

  1. Whisk together olive oil, spices, lime juice, and cilantro in a small bowl.
  2. Season chicken with salt and pepper, then place it in a large ziplock bag and pour the marinade over it.
  3. Let the chicken marinate for at least 30 minutes or overnight.
  4. Preheat the grill to medium heat and brush it with oil to prevent sticking.
  5. Grill the chicken for 5 to 6 minutes on each side until cooked through (internal temperature should reach 165°F).
  6. Remove the chicken from the grill and let it rest for 5 minutes before serving.
