Ingredients

Cilantro Lime Chicken

  • lb. boneless chicken breast
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • ¼ cup fresh cilantro
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt

Avocado Salsa

  • 4 avocados, diced
  • ½ cup fresh cilantro, diced
  • 3 tablespoons lime juice
  • ½ tablespoon red wine vinegar
  • ½ teaspoon red pepper flakes
  • 1 clove garlic, minced
  • to taste salt

Instructions

  1. Mix lime juice, olive oil, cilantro, cumin, and salt in a bowl.
  2. Marinate chicken in the mixture for 15 minutes in a ziplock bag.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 4-6 minutes on each side until cooked through.
  5. Prepare the avocado salsa by mixing avocados, cilantro, lime juice, red wine vinegar, red pepper flakes, garlic, and salt in a bowl.
  6. Serve the grilled chicken topped with avocado salsa.
