Ingredients

Cilantro Lime Chicken

  • 1.5 lbs. boneless skinless chicken breast
  • ¼ cup lime juice
  • 2 tablespoons olive oil
  • ¼ cup fresh cilantro
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt

Pico de Gallo

  • 3 pieces roma tomatoes, diced
  • ¼ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • 1 clove garlic, minced
  • 1–2 tablespoons diced jalapeño
  • 1 lime juice
  • to taste salt

Avocado Crema

  • 2 pieces avocados
  • 1 clove garlic
  • ¼ cup fresh cilantro
  • ¼ teaspoon cumin
  • teaspoon red pepper flakes
  • tablespoons lime juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • to taste salt

Tacos

  • 10 pieces corn tortillas
  • to taste cooking spray
  • cup crumbled queso fresco
  • optional pickled onions and fresh cilantro for garnish

Instructions

  1. Mix lime juice, olive oil, cilantro, cumin, and salt in a bowl.
  2. Marinate the chicken in the mixture for 15 minutes.
  3. Preheat the grill to medium-high heat and grill the chicken for 4-6 minutes on each side until cooked through.
  4. Let the chicken rest for 5 minutes, then chop into small pieces.
  5. Combine tomatoes, red onion, cilantro, garlic, jalapeño, lime juice, and salt in a bowl for pico de gallo.
  6. Blend avocados, garlic, cilantro, cumin, red pepper flakes, lime juice, red wine vinegar, olive oil, and salt in a food processor for avocado crema.
  7. Heat corn tortillas in a skillet and assemble tacos with avocado crema, chicken, pico de gallo, and queso fresco.
