Ingredients

The chicken

  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons taco seasoning
  • 5 tablespoons olive oil
  • 3 tablespoons lime juice
  • to taste salt and pepper

The tacos

  • 8 small flour tortillas
  • ½ cup shredded lettuce
  • 1 cup pico de gallo
  • ¾ cup shredded cheese
  • 1 whole avocado

Instructions

  1. Prepare the marinade by whisking together taco seasoning, olive oil, lime juice, salt, and pepper.
  2. Add chicken thighs to the marinade, coat well, and refrigerate for at least 10 minutes or up to 24 hours.
  3. Remove chicken from marinade and cook on a grill or skillet over medium heat for 4-5 minutes per side until cooked through.
  4. Let the chicken cool slightly, then chop into bite-sized pieces.
  5. Assemble the tacos by placing shredded lettuce in each tortilla, followed by the chicken, pico de gallo, cheese, and avocado.
  6. Serve immediately.
