Ingredients

The Chicken

  • 1.5 lb bone-in chicken thighs, skin on
  • 2 tablespoons taco seasoning

Taco Fixings

  • 8-12 pieces street taco flour tortillas or corn
  • ½ cup chopped cilantro
  • ½ medium white onion, finely diced
  • ½ cup cotija cheese or shredded cheddar cheese
  • cup sour cream or Greek yogurt

Instructions

  1. Prepare the chicken using your preferred method (sous vide, Instant Pot, or slow cooker).
  2. For sous vide, set the temperature to 165ºF and cook chicken thighs for 4-5 hours.
  3. For Instant Pot, sauté the chicken thighs, then seal and cook on high pressure for 10 minutes.
  4. For slow cooker, add seasoned chicken thighs with some water and cook on high for 2-4 hours or low for 6-8 hours.
  5. While chicken cooks, mix chopped cilantro and diced onion in a bowl.
  6. Once chicken is cooked, shred it using two forks.
  7. Assemble tacos by placing shredded chicken, cilantro, onion mixture, and cheese in tortillas.
  8. Serve and enjoy!
