Ingredients

The Chicken

  • lbs boneless skinless chicken thighs
  • 2 Tbsp olive oil
  • 1 Tbsp lime juice
  • tsp chili powder
  • tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ¼ tsp cayenne pepper
  • to taste N/A salt and freshly ground black pepper

For Serving

  • 10 (6-inch) corn tortillas
  • ¼ cup chopped cilantro
  • cup chopped red or yellow onions
  • to taste N/A other desired toppings

Instructions

  1. 1. Toss chicken with olive oil and lime juice in a mixing bowl.
  2. 2. Sprinkle with chili powder, cumin, garlic powder, smoked paprika, cayenne, salt, and pepper, then mix well.
  3. 3. Preheat a skillet and add remaining olive oil.
  4. 4. Brown the chicken in the skillet for about 6 minutes on one side.
  5. 5. Turn the chicken and cook for another 6 minutes until fully cooked.
  6. 6. Let the chicken rest, then chop it into pieces.
  7. 7. Assemble tacos by layering chopped chicken on tortillas and adding desired toppings.
