Ingredients

Taco Seasoning

  • 1 tablespoon chili powder
  • teaspoons ground cumin
  • ¾ teaspoon paprika
  • ½ teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • to taste salt
  • 1 teaspoon cornstarch (optional)

Taco Filling

  • 1 teaspoon olive oil or vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 pound ground chicken
  • 1 8-ounce can tomato sauce
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon brown sugar
  • to taste salt and freshly ground black pepper

Serving

  • tortillas for serving
  • to taste shredded lettuce
  • to taste diced tomatoes
  • to taste diced avocado
  • to taste minced fresh cilantro
  • to taste onion
  • to taste shredded cheddar cheese or crumbled cotija cheese
  • to taste sour cream
  • to taste hot sauce

Instructions

  1. Make the taco seasoning by whisking together chili powder, cumin, paprika, coriander, cayenne pepper, and salt in a small bowl.
  2. In a large skillet, heat oil over medium-high heat until shimmering. Add onion and cook until softened.
  3. Stir in taco seasoning, garlic, and oregano until fragrant.
  4. Add ground chicken and cook until almost cooked through but still slightly pink.
  5. Stir in tomato sauce, vinegar, and brown sugar. Simmer until thickened.
  6. Season with salt and pepper, then serve the filling in tortillas with desired toppings.
