Instructions
- Make the taco seasoning by whisking together chili powder, cumin, paprika, coriander, cayenne pepper, and salt in a small bowl.
- In a large skillet, heat oil over medium-high heat until shimmering. Add onion and cook until softened.
- Stir in taco seasoning, garlic, and oregano until fragrant.
- Add ground chicken and cook until almost cooked through but still slightly pink.
- Stir in tomato sauce, vinegar, and brown sugar. Simmer until thickened.
- Season with salt and pepper, then serve the filling in tortillas with desired toppings.
