Creamy Coconut Lime Chicken

Instructions
- Prep the shallot, garlic, ginger, and cilantro, and juice the limes.
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Heat avocado oil in a skillet over medium heat and add the chicken, cooking for 3-4 minutes on each side until browned.
- Remove the chicken and lower the heat, adding garlic and shallot to the pan, cooking for 1-2 minutes.
- Add chicken broth, coconut milk, lime juice, ginger, and cilantro to the pan, mixing well.
- Return the chicken to the skillet, cover, and simmer on low for 5 minutes until fully cooked.
- Serve with vegetables, rice, or cauliflower rice, garnished with cilantro and lime slices.
