Ingredients

The chicken

  • 4 pieces chicken breasts

The sauce

  • ½ cup shallot, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ¼ cup fresh cilantro, chopped
  • cup lime juice
  • 2 tbsp avocado oil
  • cups coconut milk
  • ¼ cup chicken broth
  • Salt and pepper
  • Lime slices for topping

Instructions

  1. Prep the shallot, garlic, ginger, and cilantro, and juice the limes.
  2. Pound the chicken breasts to an even thickness and season with salt and pepper.
  3. Heat avocado oil in a skillet over medium heat and add the chicken, cooking for 3-4 minutes on each side until browned.
  4. Remove the chicken and lower the heat, adding garlic and shallot to the pan, cooking for 1-2 minutes.
  5. Add chicken broth, coconut milk, lime juice, ginger, and cilantro to the pan, mixing well.
  6. Return the chicken to the skillet, cover, and simmer on low for 5 minutes until fully cooked.
  7. Serve with vegetables, rice, or cauliflower rice, garnished with cilantro and lime slices.
