Ingredients

The marinade

The chicken

  • 3 lbs. chicken pieces with bones and skin (e.g., drumsticks and thighs)

For serving

  • rice noodles
  • cilantro
  • carrots
  • lime wedges
  • peanuts
  • onions or shallots

Instructions

  1. Prepare the marinade by whisking together lime juice, lime zest, brown sugar, garlic, ginger, and coconut milk in a large bowl.
  2. Add the chicken pieces to the marinade, sprinkle with salt, cover, and refrigerate for at least 4 hours.
  3. Preheat the oven to 475°F and grease a rimmed baking sheet.
  4. Arrange the marinated chicken on the baking sheet and bake for 30 minutes, turning the pan as needed to ensure even browning.
  5. Once browned and cooked through, sprinkle the chicken with extra salt and serve with rice noodles, cilantro, carrots, peanuts, and lime juice.
