Ingredients

The chicken and seasoning

  • 4 pieces boneless chicken thighs
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • 1 tbsp olive oil

The vegetables

  • 1 lb baby red potatoes
  • 8 oz green beans

The sauce

  • 2 tbsp minced garlic
  • ½ cup dijon mustard
  • ½ cup honey
  • ¼ cup soy sauce
  • ¼ cup olive oil

Instructions

  1. Preheat the oven to 400°F.
  2. Pat the chicken dry and season with salt, pepper, and garlic powder.
  3. Heat 1 tablespoon of olive oil in a cast iron skillet and sear the chicken thighs for 3 minutes on each side.
  4. Remove the chicken from the skillet and add the diced potatoes, cooking for 8-10 minutes until browned.
  5. While the potatoes cook, whisk together the minced garlic, dijon mustard, honey, soy sauce, and olive oil in a bowl.
  6. Add the chicken, potatoes, and green beans to the bowl with the sauce, tossing to coat.
  7. Return everything to the skillet, pour the remaining sauce over, and bake for 25-30 minutes until the chicken reaches an internal temperature of 160°F.
  8. Serve warm and enjoy!
