Instructions
- Preheat the oven to 400°F.
- Pat the chicken dry and season with salt, pepper, and garlic powder.
- Heat 1 tablespoon of olive oil in a cast iron skillet and sear the chicken thighs for 3 minutes on each side.
- Remove the chicken from the skillet and add the diced potatoes, cooking for 8-10 minutes until browned.
- While the potatoes cook, whisk together the minced garlic, dijon mustard, honey, soy sauce, and olive oil in a bowl.
- Add the chicken, potatoes, and green beans to the bowl with the sauce, tossing to coat.
- Return everything to the skillet, pour the remaining sauce over, and bake for 25-30 minutes until the chicken reaches an internal temperature of 160°F.
- Serve warm and enjoy!
