Chicken and Broccoli Skillet Bake

Ingredients

The main ingredients

  • 3 tablespoons olive oil
  • 1 pound boneless chicken, diced
  • 2 large broccoli heads, florets removed, stems spiralized
  • 2 cloves garlic, minced or grated
  • ½ cup diced white onion
  • ½ cup low-sodium chicken broth
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried parsley
  • ¼ teaspoon onion powder
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded havarti cheese

Seasoning

  • to taste pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Heat 1 tablespoon of olive oil in a 12-inch oven-safe skillet over medium heat.
  3. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 3-5 minutes.
  4. Remove the chicken and set aside.
  5. Boil salted water and cook the broccoli florets and spiralized stems for 2-3 minutes until tender, then drain.
  6. In the same skillet, heat the remaining olive oil and sauté garlic and onion until soft, about 5-8 minutes.
  7. Whisk in the chicken broth and cook until thickened, about 2 minutes.
  8. Add thyme, parsley, and onion powder, then stir in the chicken and cooked broccoli.
  9. Remove from heat and sprinkle cheese on top.
  10. Cover with foil and bake for 25 minutes until cheese is melted, then broil for an additional 1-2 minutes until lightly browned.
