Chicken and Broccoli Skillet Bake

Instructions
- Preheat the oven to 400°F.
- Heat 1 tablespoon of olive oil in a 12-inch oven-safe skillet over medium heat.
- Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 3-5 minutes.
- Remove the chicken and set aside.
- Boil salted water and cook the broccoli florets and spiralized stems for 2-3 minutes until tender, then drain.
- In the same skillet, heat the remaining olive oil and sauté garlic and onion until soft, about 5-8 minutes.
- Whisk in the chicken broth and cook until thickened, about 2 minutes.
- Add thyme, parsley, and onion powder, then stir in the chicken and cooked broccoli.
- Remove from heat and sprinkle cheese on top.
- Cover with foil and bake for 25 minutes until cheese is melted, then broil for an additional 1-2 minutes until lightly browned.
