Ingredients

The broccoli

  • 20 oz fresh broccoli florets

The cheese sauce

  • 3 tablespoons light butter
  • 3 tablespoons flour
  • 1 ½ cups skim milk
  • ½ teaspoon salt
  • teaspoon black pepper
  • ½ teaspoon dry mustard powder
  • 4 oz sharp cheddar cheese, shredded
  • 4 oz 50% reduced fat sharp cheddar cheese, shredded

Instructions

  1. Steam the broccoli until bright green and tender, then drain and transfer to a baking dish.
  2. Preheat the oven to 350°F.
  3. Melt the butter in a saucepan over medium-low heat, then whisk in the flour gradually.
  4. Add the milk gradually while whisking until smooth, then heat until warmed.
  5. Stir in the salt, pepper, mustard powder, and 6 oz of shredded cheese until melted and thickened.
  6. Pour the cheese sauce over the broccoli and mix to coat evenly.
  7. Sprinkle the remaining cheese on top and bake for 20 minutes until melted.
