Pear and Squash Chicken Skillet

Instructions
- 1. Heat a large cast iron pan over medium heat and dice the bacon.
- 2. Cook the bacon for 6-7 minutes until starting to brown, then remove and place on a paper towel.
- 3. Preheat the oven to 400°F.
- 4. Slice the pears and prepare the squash by cutting in half, scooping out seeds, and slicing into ¼-inch pieces.
- 5. In a bowl, combine the squash and pears with avocado oil, rosemary, cayenne pepper, salt, and pepper.
- 6. Season the chicken with salt and pepper.
- 7. In the same pan, brown the chicken for 5 minutes on each side, then remove from heat.
- 8. Add the squash and pear mixture around and over the chicken, then sprinkle the bacon on top.
- 9. Transfer the skillet to the oven and bake for 25-30 minutes until the chicken is cooked through.
