Pear and Squash Chicken Skillet

Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 1 large delicata squash
  • 2 pieces bosc pears
  • ½ tablespoon avocado oil
  • 2 tablespoons fresh rosemary, chopped
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 4 pieces bacon, diced

Instructions

  1. 1. Heat a large cast iron pan over medium heat and dice the bacon.
  2. 2. Cook the bacon for 6-7 minutes until starting to brown, then remove and place on a paper towel.
  3. 3. Preheat the oven to 400°F.
  4. 4. Slice the pears and prepare the squash by cutting in half, scooping out seeds, and slicing into ¼-inch pieces.
  5. 5. In a bowl, combine the squash and pears with avocado oil, rosemary, cayenne pepper, salt, and pepper.
  6. 6. Season the chicken with salt and pepper.
  7. 7. In the same pan, brown the chicken for 5 minutes on each side, then remove from heat.
  8. 8. Add the squash and pear mixture around and over the chicken, then sprinkle the bacon on top.
  9. 9. Transfer the skillet to the oven and bake for 25-30 minutes until the chicken is cooked through.
