Spicy Skillet Peach Chicken

peach preserves (no-sugar-added)

Instructions
- Pat the chicken dry and season with salt and pepper.
- Preheat a skillet over medium heat and add oil.
- Sear the chicken in the skillet until golden on both sides, then transfer to a plate.
- Sauté onions in the skillet until tender, then add red pepper and sauté briefly.
- Deglaze the pan with wine and vinegar, then bring to a simmer.
- Stir in preserves and soy sauce, return chicken and add peaches, simmering until cooked through.
- Top with fresh basil if desired.
