Spicy Skillet Peach Chicken

Ingredients

The chicken

  • 6-8 pieces boneless, skinless chicken thighs
  • 1 teaspoon sea salt
  • to taste freshly ground black pepper
  • tablespoons unrefined olive oil (or avocado oil)

The sauce

  • ½ piece red onion (or yellow onion, sliced ¼ inches thick)
  • ¼ teaspoon crushed red pepper flakes
  • ½ cup dry white wine (or chicken stock)
  • 2 tablespoons unseasoned rice vinegar (or white wine vinegar)
  • ¾ cup peach preserves (no-sugar-added)
  • 2 tablespoons soy sauce (or tamari or coconut aminos)

The fruit

  • 2 pieces peaches (cut into fourths or 1½ cups of frozen peaches)

The garnish

  • to taste fresh basil leaves (optional, thinly sliced)

Instructions

  1. Pat the chicken dry and season with salt and pepper.
  2. Preheat a skillet over medium heat and add oil.
  3. Sear the chicken in the skillet until golden on both sides, then transfer to a plate.
  4. Sauté onions in the skillet until tender, then add red pepper and sauté briefly.
  5. Deglaze the pan with wine and vinegar, then bring to a simmer.
  6. Stir in preserves and soy sauce, return chicken and add peaches, simmering until cooked through.
  7. Top with fresh basil if desired.
