Instructions
- Mix garlic powder, cumin, coriander, smoked paprika, sea salt, pepper, and olive oil in a small bowl until combined.
- Rub the mixture over both sides of the chicken.
- Heat a large skillet to medium-high heat and cook the chicken for 4-6 minutes on each side until there is no pink in the middle. Let the chicken rest.
- In a medium bowl, combine diced peach, red pepper, red onion, cilantro, jalapeno, red wine vinegar, and salt.
- Slice the chicken and top with the peach salsa.
