Ingredients

Spice Rubbed Chicken

  • 3 pieces chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil

Peach Salsa

  • 1 large peach, diced (about 1 ½ cups)
  • ½ cup diced red pepper
  • cup diced red onion
  • ¼ cup diced fresh cilantro
  • ½ piece jalapeno, diced
  • 1 tablespoon red wine vinegar
  • to taste salt

Instructions

  1. Mix garlic powder, cumin, coriander, smoked paprika, sea salt, pepper, and olive oil in a small bowl until combined.
  2. Rub the mixture over both sides of the chicken.
  3. Heat a large skillet to medium-high heat and cook the chicken for 4-6 minutes on each side until there is no pink in the middle. Let the chicken rest.
  4. In a medium bowl, combine diced peach, red pepper, red onion, cilantro, jalapeno, red wine vinegar, and salt.
  5. Slice the chicken and top with the peach salsa.
