Ingredients

The chicken

  • 4 pieces Boneless skinless chicken breasts
  • 1 tsp Sea salt
  • ½ tsp Smoked paprika
  • ¼ tsp Cumin
  • ¼ tsp Black pepper
  • 1 tbsp Olive oil

The vegetables

  • 1 medium White onion (sliced thinly)
  • 2 cloves Garlic (minced)

The sauce

  • cups Tomato salsa

The cheese

  • ½ cup Cheddar cheese (shredded)
  • ½ cup White cheddar cheese (shredded)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken with salt, smoked paprika, cumin, and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat and cook the chicken until golden on both sides.
  4. Remove the chicken and keep it warm.
  5. In the same pan, reduce heat to medium, add onions and garlic, and cook until softened.
  6. Return the chicken to the pan, add salsa, and mix to coat the chicken.
  7. Sprinkle shredded cheese on top and bake in the oven until the cheese is melted and bubbly.
