Cowboy Chicken

Ingredients

The chicken

  • 3 medium boneless, skinless chicken breasts
  • 1 ½ pounds chicken breasts

The spices

  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon ground black pepper

The canned ingredients

  • 1 14.5-ounce can fire roasted diced tomatoes
  • 1 15-ounce can reduced sodium black beans
  • 1 11-ounce can Mexican style corn
  • 1 4-ounce can green chiles

The toppings

  • 4 ounces shredded pepper jack cheese
  • ¼ cup chopped fresh cilantro
  • ½ medium lime

Instructions

  1. Preheat the oven to 375°F and pound the chicken to even thickness.
  2. Rub half of the spice mixture onto the chicken.
  3. Brown the chicken in a skillet and then remove it to a plate.
  4. Add the tomatoes to the skillet and simmer, then stir in the beans, corn, green chiles, and remaining spices.
  5. Return the chicken to the pan and cover it with the sauce, then bake for 7 to 10 minutes.
  6. Sprinkle cheese on top and broil for 1 to 2 minutes, then finish with lime juice and cilantro.
