Instructions
- Preheat the oven to 375°F and pound the chicken to even thickness.
- Rub half of the spice mixture onto the chicken.
- Brown the chicken in a skillet and then remove it to a plate.
- Add the tomatoes to the skillet and simmer, then stir in the beans, corn, green chiles, and remaining spices.
- Return the chicken to the pan and cover it with the sauce, then bake for 7 to 10 minutes.
- Sprinkle cheese on top and broil for 1 to 2 minutes, then finish with lime juice and cilantro.
