Instructions
- Cook chicken with salsa, water, cumin, chili powder, and salt in a slow cooker or Instant Pot.
- Preheat oven and roast the peppers and corn until browned.
- Shred the chicken in the pot and add roasted vegetables, black beans, remaining salsa, and cream cheese.
- Simmer until smooth and melted, then stir in Pepper Jack cheese.
- Serve with toppings and tortilla chips.
