Queso Chicken Chili

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 3 cups salsa, divided
  • cups water
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • ½ teaspoon salt
  • 3 count bell peppers, minced
  • 1 14 ounce can corn, rinsed and drained
  • 1 count jalapeño pepper, minced
  • 1 14 ounce can black beans, rinsed and drained
  • 4 ounces light cream cheese
  • 6 ounces Pepper Jack cheese
  • to taste none cilantro for topping
  • to serve none blue corn tortilla chips

Instructions

  1. Cook chicken with salsa, water, cumin, chili powder, and salt in a slow cooker or Instant Pot.
  2. Preheat oven and roast the peppers and corn until browned.
  3. Shred the chicken in the pot and add roasted vegetables, black beans, remaining salsa, and cream cheese.
  4. Simmer until smooth and melted, then stir in Pepper Jack cheese.
  5. Serve with toppings and tortilla chips.
