White Chicken Chili

Ingredients

  • 4 large boneless, skinless chicken breasts
  • 2 pieces green bell peppers
  • 1 large yellow onion
  • 1 piece jalapeno
  • 1 can diced green chiles (optional)
  • tablespoons butter
  • 2 14-ounce cans white beans, rinsed and drained
  • cups chicken or vegetable broth
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • to taste salt
  • ¼ cup cornmeal
  • ¼ cup milk

Instructions

  1. 1. Boil water in a large pot, add chicken breasts, and cook for 30 minutes until done. Drain and shred the chicken.
  2. 2. Mix cornmeal and milk in a small bowl and let it rest.
  3. 3. Dice the bell peppers, onion, and jalapeno. Melt butter in a large pot over medium-high heat and sauté the vegetables until soft.
  4. 4. Add beans, chicken, broth, and spices to the pot. Stir and bring to a low boil, then cover and simmer for 20-30 minutes.
  5. 5. Stir in the cornmeal and milk mixture and simmer for another 10 minutes, stirring occasionally. Remove from heat and let it thicken.
  6. 6. Serve topped with sour cream, cilantro, and tortilla chips.
