White Chicken Chili

Great Northern beans, rinsed and drained

chopped or shredded cooked skinless chicken breast

Instructions
- Heat oil in a large pot or Dutch oven over medium heat.
- Sauté onions for 5-8 minutes until tender.
- Stir in chili powder, garlic, and cumin; cook for 2 minutes.
- Add oregano and beans, stir, and cook for 30 seconds.
- Pour in the broth, reduce heat to medium-low, and simmer for 20 minutes.
- Remove 2 cups of the mixture and blend until smooth, then return to the pot.
- Add chicken and tomatoes, cooking for another 30 minutes on medium-low.
- Stir in cilantro, lime juice, salt, and pepper before serving.
