Ingredients

The base

  • 1 tablespoon canola oil
  • 2 cups yellow onion, chopped
  • 2 tablespoons chili powder
  • 1 tablespoon minced garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano
  • 3 cans (15.5 oz) Great Northern beans, rinsed and drained
  • 4 cups reduced sodium fat free chicken broth
  • 3 cups chopped or shredded cooked skinless chicken breast
  • 1 can (14.5 oz) diced tomatoes

The garnish

  • cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Heat oil in a large pot or Dutch oven over medium heat.
  2. Sauté onions for 5-8 minutes until tender.
  3. Stir in chili powder, garlic, and cumin; cook for 2 minutes.
  4. Add oregano and beans, stir, and cook for 30 seconds.
  5. Pour in the broth, reduce heat to medium-low, and simmer for 20 minutes.
  6. Remove 2 cups of the mixture and blend until smooth, then return to the pot.
  7. Add chicken and tomatoes, cooking for another 30 minutes on medium-low.
  8. Stir in cilantro, lime juice, salt, and pepper before serving.
