Ingredients

The base

  • 1 tablespoon vegetable oil
  • 2-3 pounds boneless, skinless chicken thighs, cut into 1 1/2-inch pieces
  • 1 large yellow onion, diced
  • 1 tablespoon minced garlic
  • 1 large poblano pepper, seeded and diced
  • 1 large jalapeno pepper, diced

The spices

  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ancho chili powder

The main ingredients

  • 2 cans white beans, rinsed and drained
  • 4 cups chicken broth, divided
  • 1 cup frozen sweet corn
  • ¼ cup fresh chopped cilantro

Seasoning

  • to taste salt

Instructions

  1. Heat the oil in a skillet and cook the chicken for 3 to 5 minutes.
  2. Add minced garlic, onions, poblano, jalapeno, cumin, and oregano, and sauté for 3 to 5 minutes until the onions are wilted.
  3. Pour in the chicken broth, then add the white beans, chili, paprika, and sweet corn.
  4. Bring the mixture to a boil and let it simmer for about 30 minutes until the chili thickens.
  5. Serve warm with cornbread or bread.
