Instructions
- Heat olive oil in a large pan over medium-high heat and sauté cubed chicken for 3 to 5 minutes, then set aside.
- In the same pan, add remaining olive oil and sauté diced onion, minced garlic, and chopped jalapeño for about 5 minutes.
- Add ½ cup chopped cilantro to the pan and mix, then transfer to a large pot.
- In the pot, add spices (cumin, oregano, paprika, cayenne, black pepper, and salt) and cook for 2 to 3 minutes.
- Stir in white beans and chicken broth, mixing well, and let the chili simmer for at least 30 minutes.
- Use a potato masher to mash the beans to your desired consistency.
- Add the sautéed chicken, frozen corn, and diced green chiles to the pot, stirring well, and simmer for another 10 to 15 minutes.
- Before serving, stir in the remaining ½ cup cilantro and serve warm, optionally topped with sour cream.
