Ingredients

Main Ingredients

  • 4 tablespoons olive oil
  • 1 ½ pounds chicken breast
  • 1 cup diced onion
  • 5 cloves garlic
  • 1 tablespoon chopped jalapeño
  • 1 cup cilantro leaves
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 4 cans white beans
  • 6 cups chicken broth
  • 16 ounces frozen corn
  • 2 cans diced green chile peppers

Optional Toppings

  • to taste sour cream

Instructions

  1. Heat olive oil in a large pan over medium-high heat and sauté cubed chicken for 3 to 5 minutes, then set aside.
  2. In the same pan, add remaining olive oil and sauté diced onion, minced garlic, and chopped jalapeño for about 5 minutes.
  3. Add ½ cup chopped cilantro to the pan and mix, then transfer to a large pot.
  4. In the pot, add spices (cumin, oregano, paprika, cayenne, black pepper, and salt) and cook for 2 to 3 minutes.
  5. Stir in white beans and chicken broth, mixing well, and let the chili simmer for at least 30 minutes.
  6. Use a potato masher to mash the beans to your desired consistency.
  7. Add the sautéed chicken, frozen corn, and diced green chiles to the pot, stirring well, and simmer for another 10 to 15 minutes.
  8. Before serving, stir in the remaining ½ cup cilantro and serve warm, optionally topped with sour cream.
