Healthy White Bean Chili

mild green chilis

Great Northern or cannelini beans, drained and rinsed

vegetable broth
The flavorings

cilantro leaves, chopped

lime
juiced

reduced sodium soy sauce

plain Greek yogurt

salt and pepper
to taste
Instructions
- Blend one can of drained and rinsed beans with one cup of broth until mostly smooth.
- Sauté onion in oil for 3 minutes, then add garlic and cook for another minute.
- Add cumin, coriander, and oregano, cooking for an additional minute.
- Stir in corn, chiles, remaining beans, remaining broth, and the blended bean mixture.
- Bring to a boil, then reduce heat and simmer covered for 30 minutes.
- Remove from heat and stir in cilantro, yogurt, lime juice, and soy sauce.
- Season to taste with salt and pepper before serving.
