Chili Ingredients

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 15 oz can white beans, rinsed and drained
  • 1 15 oz can chickpeas, rinsed and drained
  • 1 16 oz jar mild salsa verde
  • 4 cups low sodium vegetable broth
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon ground oregano
  • ¼ cup fresh chopped cilantro
  • 1 medium lime, juiced
  • to taste salt and black pepper

Optional Toppings

  • to taste sour cream or plain Greek yogurt
  • to taste tortilla chips
  • to taste chopped avocado
  • to taste chopped cilantro
  • to taste shredded cheese
  • to taste lime wedges

Instructions

  1. Heat olive oil in a large pot over high heat.
  2. Add diced onion and cook until tender, about 5 minutes.
  3. Stir in minced garlic and cook for an additional 2-3 minutes.
  4. Add white beans, chickpeas, salsa verde, vegetable broth, cumin, chili powder, oregano, cilantro, and lime juice.
  5. Season with salt and black pepper to taste.
  6. Simmer the chili on low for about 15-20 minutes.
  7. Ladle the chili into bowls and serve warm, garnished with your choice of toppings.
