Ingredients

  • 1 can green chiles
  • 1 15-oz. white cannellini beans
  • 3 cups chicken broth
  • 1 15-oz. yellow corn
  • 2 15-oz. pinto beans
  • 1 15-oz. white hominy

Fresh Ingredients

  • ½ medium white onion
  • 4 cloves garlic
  • 1 large poblano pepper
  • 1 lb. boneless, skinless chicken breasts
  • 2 tablespoons lime juice
  • 4 oz. cream cheese or Greek yogurt

Seasonings and Spices

  • 2 tablespoons ground cumin
  • 1 teaspoon ground oregano
  • 1 tablespoon garlic powder
  • 1 tablespoon green hot sauce (optional)
  • ¼ teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat and add olive oil.
  2. Sauté diced onion for about 2 minutes, then add garlic, poblano pepper, and salt until the onion is translucent.
  3. Deglaze the pot with the green chiles, scraping the bottom to loosen brown bits.
  4. Add cumin, oregano, garlic powder, and cannellini beans, mixing well.
  5. Add chicken breasts and chicken broth, bringing to a boil uncovered.
  6. Once boiling, reduce heat to low, cover, and simmer for 20 minutes.
  7. Remove chicken, shred it, and set aside.
  8. Blend the soup mixture until smooth, then add cream cheese or Greek yogurt and emulsify.
  9. Stir in shredded chicken and remaining ingredients, cooking until boiling.
  10. Remove from heat, stir, and serve.
