Instructions
- Heat a large pot or Dutch oven over medium-high heat and add olive oil.
- Sauté diced onion for about 2 minutes, then add garlic, poblano pepper, and salt until the onion is translucent.
- Deglaze the pot with the green chiles, scraping the bottom to loosen brown bits.
- Add cumin, oregano, garlic powder, and cannellini beans, mixing well.
- Add chicken breasts and chicken broth, bringing to a boil uncovered.
- Once boiling, reduce heat to low, cover, and simmer for 20 minutes.
- Remove chicken, shred it, and set aside.
- Blend the soup mixture until smooth, then add cream cheese or Greek yogurt and emulsify.
- Stir in shredded chicken and remaining ingredients, cooking until boiling.
- Remove from heat, stir, and serve.
