Instructions
- Brine the chicken breasts in a saltwater solution for 15 minutes, then rinse and pat dry.
- Preheat the oven to 450°F (232°C).
- Brush the chicken with melted butter or olive oil and season with the ginger spice mixture.
- Bake the chicken for 15-18 minutes until cooked through and the internal temperature reaches 160-170°F.
- While the chicken is baking, prepare the peach salsa by mixing diced peaches, jalapeño, cilantro, bell pepper, onion, lime juice and zest, ginger, and salt in a bowl.
- Once the chicken is done, let it rest for 5-10 minutes, then serve topped with the peach salsa.
