Ginger Chicken with Confetti Peach Salsa

Ingredients

Baked Ginger Chicken

  • 4 pieces boneless skinless chicken breasts
  • 1 tablespoon melted butter or olive oil
  • 2 teaspoons ground ginger
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly-cracked black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika

Fresh Peach Salsa

  • 2 medium peaches
  • 1 piece jalapeño
  • ½ cup finely-chopped fresh cilantro
  • cup finely-chopped red bell pepper
  • cup finely-chopped red onion
  • 1 piece lime (juice and zest)
  • a big pinch ground ginger
  • a big pinch kosher salt

Instructions

  1. Brine the chicken breasts in a saltwater solution for 15 minutes, then rinse and pat dry.
  2. Preheat the oven to 450°F (232°C).
  3. Brush the chicken with melted butter or olive oil and season with the ginger spice mixture.
  4. Bake the chicken for 15-18 minutes until cooked through and the internal temperature reaches 160-170°F.
  5. While the chicken is baking, prepare the peach salsa by mixing diced peaches, jalapeño, cilantro, bell pepper, onion, lime juice and zest, ginger, and salt in a bowl.
  6. Once the chicken is done, let it rest for 5-10 minutes, then serve topped with the peach salsa.
