Skillet Pineapple BBQ Chicken

Ingredients

The chicken

  • 6 pieces boneless skinless chicken thighs
  • 1 Tbsp cooking oil
  • 1 pinch salt
  • 1 pinch pepper

The sauce

  • 20 oz can pineapple slices in juice
  • ½ cup BBQ sauce

The toppings

  • 1 piece jalapeño (optional), sliced thinly
  • 2 pieces green onions, sliced

Instructions

  1. Heat a large skillet over medium heat and add cooking oil.
  2. Season chicken thighs with salt and pepper, then add to the skillet once the oil is hot.
  3. Cook chicken until golden brown on both sides and cooked through, then remove from skillet.
  4. Drain and reserve the juice from the canned pineapple slices.
  5. Lower the heat and add about ½ cup of reserved pineapple juice to the skillet, scraping the browned bits.
  6. Add BBQ sauce to the skillet and stir until a thick sauce forms, adjusting with more pineapple juice if needed.
  7. Return chicken and pineapple slices to the skillet, coating them in the sauce.
  8. Adjust oven rack to 6 inches from the broiler and turn on the broiler.
  9. Broil for about 5 minutes until caramelized, then add jalapeño and green onions before serving.
