Instructions
- Heat a large skillet over medium heat and add cooking oil.
- Season chicken thighs with salt and pepper, then add to the skillet once the oil is hot.
- Cook chicken until golden brown on both sides and cooked through, then remove from skillet.
- Drain and reserve the juice from the canned pineapple slices.
- Lower the heat and add about ½ cup of reserved pineapple juice to the skillet, scraping the browned bits.
- Add BBQ sauce to the skillet and stir until a thick sauce forms, adjusting with more pineapple juice if needed.
- Return chicken and pineapple slices to the skillet, coating them in the sauce.
- Adjust oven rack to 6 inches from the broiler and turn on the broiler.
- Broil for about 5 minutes until caramelized, then add jalapeño and green onions before serving.
