Pineapple Glazed Chicken

Instructions
- Trim excess fat from the chicken and pat dry.
- Wash and season the chicken with salt and pepper, then apply the spice blend generously on both sides.
- Preheat the oven to 400°F.
- Heat oil in a pan and sear the chicken for 3-4 minutes on each side until slightly browned.
- Remove the chicken and clean the pan if necessary.
- In the same pan, caramelize the pineapple for about 7 minutes.
- Add garlic, onion, smoked paprika, and optional pepper sauce, cooking for a minute.
- Pour in pineapple juice and honey, bring to a boil, and let simmer for 2 minutes.
- Adjust seasoning with additional spice blend if needed.
- Return the chicken to the pan with a sprig of thyme and bake for 35-40 minutes until cooked through.
- Let cool before serving, optionally garnishing with parsley.
