Ingredients

Chicken Rub

  • 2 ½ - 3 pounds chicken thighs
  • to taste Salt and Pepper
  • 2 teaspoons onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon white pepper
  • ½ teaspoon bouillon powder

Pineapple Glazed Chicken

  • 1 tablespoon cooking oil
  • 2 cups chopped pineapple
  • 2 teaspoons minced garlic
  • ¼ cup onion
  • 1 teaspoon smoked paprika
  • ½ teaspoon pepper sauce or sriracha (optional)
  • 2 cups pineapple juice
  • 1 tablespoon honey
  • 1 sprig thyme
  • to taste pepper

Instructions

  1. Trim excess fat from the chicken and pat dry.
  2. Wash and season the chicken with salt and pepper, then apply the spice blend generously on both sides.
  3. Preheat the oven to 400°F.
  4. Heat oil in a pan and sear the chicken for 3-4 minutes on each side until slightly browned.
  5. Remove the chicken and clean the pan if necessary.
  6. In the same pan, caramelize the pineapple for about 7 minutes.
  7. Add garlic, onion, smoked paprika, and optional pepper sauce, cooking for a minute.
  8. Pour in pineapple juice and honey, bring to a boil, and let simmer for 2 minutes.
  9. Adjust seasoning with additional spice blend if needed.
  10. Return the chicken to the pan with a sprig of thyme and bake for 35-40 minutes until cooked through.
  11. Let cool before serving, optionally garnishing with parsley.
