Ingredients

The Chicken

  • 1 lb boneless, skinless chicken breasts, patted dry and cut into bite size chunks
  • 2 tbsp corn starch
  • ½ tsp salt
  • ½ tsp ground black pepper

The Vegetables

  • 1 lb fresh pineapple, cut into bite size chunks
  • 1 large onion, cut into chunks
  • 1 bell pepper, use any colour you want cut into chunks

The Sauce

  • cup water
  • 2 tbsp fresh ginger, grated
  • 2 tbsp tamari or coconut aminos
  • 2 tbsp unseasoned rice vinegar
  • 2 tbsp unpasteurized honey
  • 1 tbsp toasted sesame oil
  • 1 tbsp tomato paste
  • ½ tbsp sambal oelek

Optional Garnish

  • to taste sliced green onions
  • to taste black sesame seeds

Instructions

  1. 1. Combine corn starch, salt, and pepper in a bowl; toss chicken pieces to coat evenly.
  2. 2. Heat cooking fat in a large wok or skillet over high heat; add chicken and cook until golden brown, about 5 minutes.
  3. 3. Meanwhile, whisk together all sauce ingredients in a measuring cup until well combined.
  4. 4. Once chicken is cooked, add onions and bell peppers; stir and cook for 3 to 5 minutes until slightly softened.
  5. 5. Add pineapple and pour in the sauce; stir well and simmer for 1 to 2 minutes until sauce thickens and pineapple is warmed through.
  6. 6. Garnish with green onions and black sesame seeds; serve immediately.
