Ingredients

The chicken and vegetables

  • 1 Tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • to taste salt and pepper
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 red bell pepper, trimmed and cut into 1-inch pieces
  • 2 cups fresh pineapple, cubed
  • optional green onions and sesame seeds for garnish

The sauce

  • ¼ cup lower sodium soy sauce
  • ¼ cup pineapple juice
  • 1 tsp sesame oil
  • 3 Tbsp honey
  • 2 tsp fresh grated ginger

Instructions

  1. Heat olive oil in a large skillet over medium heat and add chicken, seasoning with salt and pepper. Sauté until lightly browned, about 4 to 5 minutes.
  2. Add minced garlic to the skillet and sauté for about 30 seconds.
  3. Incorporate broccoli, bell pepper, and pineapple into the skillet, cooking for an additional 5 minutes until the veggies are tender and chicken is cooked through.
  4. In a small bowl, whisk together the soy sauce, pineapple juice, sesame oil, honey, and ginger. Pour the sauce into the skillet and bring to a simmer.
  5. Garnish with green onions and sesame seeds before serving.
