BBQ Chicken Pineapple Skewers

Ingredients

The marinade

  • cup ketchup
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic, finely minced
  • ½ teaspoon sweet or smoked paprika
  • ½ teaspoon coarse, kosher salt
  • ¼ teaspoon chili powder
  • ¼ teaspoon black pepper

The skewers

  • 1 ½ to 2 pounds boneless skinless chicken breasts or chicken thighs, cut into 1 ½-inch pieces
  • 1 medium pineapple
  • 2 medium bell peppers, any color
  • 1 medium red onion

Instructions

  1. Whisk together the marinade ingredients in a bowl.
  2. Marinate the chicken in a resealable bag or shallow dish for 2 to 24 hours.
  3. Preheat the grill to medium/medium-high heat.
  4. Cut the pineapple, peppers, and onions into 1 to 1½-inch pieces.
  5. Thread the chicken, pineapple, peppers, and onions onto the skewers.
  6. Grill the skewers, flipping once, until chicken is cooked through, about 4 to 5 minutes per side for breasts and 6 to 7 minutes per side for thighs.
  7. Serve immediately.
