Hawaiian Chicken Skewers

Ingredients

The marinade

  • ¼ cup low sodium soy sauce
  • 2 oz canned pineapple juice
  • ¼ cup light coconut milk
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • ½ teaspoon sesame oil
  • 2 scallions, chopped

The skewers

  • 1 ½ pounds raw boneless, skinless chicken breasts, cut into bite-sized chunks
  • 1 lb fresh pineapple, cut into bite-sized pieces

Instructions

  1. 1. Combine the marinade ingredients in a bowl and mix thoroughly.
  2. 2. Pour the marinade into a Ziploc bag and add the chicken, sealing the bag and shaking to coat.
  3. 3. Refrigerate the chicken in the marinade for at least 4 hours, preferably overnight.
  4. 4. Preheat the grill until hot.
  5. 5. Divide the marinated chicken and pineapple onto skewers.
  6. 6. Grill the skewers over low heat for about 10 minutes, flipping halfway through until the chicken is cooked through.
