Hawaiian Chicken Kabobs

Ingredients

The chicken and vegetables

  • 1 ¼ lb boneless, skinless chicken breasts
  • 1 each red bell pepper
  • 1 each green bell pepper
  • 1 each yellow bell pepper
  • 1 each red onion
  • 3 cups fresh pineapple

The marinade

  • ¼ cup fresh pineapple juice
  • ¼ cup reduced sodium soy sauce
  • 1 Tbsp honey
  • 1 Tbsp olive oil
  • 1 ½ Tbsp hot chili paste
  • 2 tsp fresh grated ginger
  • 2 cloves garlic

Optional garnish

  • to taste green onions
  • to taste cilantro

Instructions

  1. Prepare the marinade by whisking together pineapple juice, soy sauce, honey, olive oil, chili paste, ginger, and garlic.
  2. Reserve ¼ cup of the marinade and pour the rest over the chicken in a ziplock bag, ensuring it's fully coated. Marinate in the fridge for at least 30 minutes.
  3. Soak wooden skewers in water for 30 minutes to prevent burning.
  4. Chop the vegetables and thread the marinated chicken, veggies, and pineapple onto the skewers.
  5. Preheat the grill to medium-high heat and grill the skewers for about 5 to 6 minutes on each side, brushing with the reserved marinade.
