Instructions
- Prepare the marinade by whisking together pineapple juice, soy sauce, honey, olive oil, chili paste, ginger, and garlic.
- Reserve ¼ cup of the marinade and pour the rest over the chicken in a ziplock bag, ensuring it's fully coated. Marinate in the fridge for at least 30 minutes.
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Chop the vegetables and thread the marinated chicken, veggies, and pineapple onto the skewers.
- Preheat the grill to medium-high heat and grill the skewers for about 5 to 6 minutes on each side, brushing with the reserved marinade.
